100 ml light or tamari soy sauce
200 ml water
1/2 cinnamon stick
1/2 tsp fennel seeds
1/2 star anise
1/2 tsp Sichuan pepper
10 g piece of ginger, crushed slightly
3 tbsp brown sugar


1.Put the soy sauce into a saucepan with 200 ml water and bring to boil. Add the spices and ginger, reduce the heat and simmer for 30 minutes.
2.Add the sugar and stir to dissolve: you should end up with about 100 ml of liquid.
